Flourless Banana Pancakes
Truly flourless, delicate and delicious. Be sure to top them with the Blueberry Sauce!
This makes 4 medium sized pancakes or about 8 silver dollar ones.
Ingredients
1 and 1/2 large, very ripe bananas
2 eggs
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/8 teaspoon baking powder (aluminum free)
Pinch of sea salt
Cooking Instructions
- Whisk egg until light and fluffy. In a separate bowl mash the banana with a fork. 
- Add your whipped egg, cinnamon, baking powder, vanilla, and salt to the banana mash. Whisk until nicely combined. 
- Add a bit of coconut oil spray or butter to a hot nonstick pan or griddle. 
- Scoop about 2 ounces of batter into the pan (think: ice cream scoop size). Let the pancake bubble and set around the edges. Flop and lightly cook the other side. 
- Serve with your favorite toppings! (I like these with fresh blueberry sauce, fresh raspberries, and a dollop of cultured sour cream)
